Hello 2012! Pineapple Upside-down Cake :)

The year is here! It's time to get your resolutions from last year that we failed in action this year! Hehe, come on, you know it happened to you too. ._.

Depression over, this is a recipe I've been planning to post for so long, but every time I sat down on my computer, I remembered something else I had to do and forgot this one... I'm sorry. :'(

If any of you watch Korean dramas and haven't seen the Secret Garden, then let me tell you that you are missing out! I TOTALLY RECOMMEND IT! It's sooooooo freakishly good it's crazy. Lie To Me, Coffee Prince, and City Hunter are really good too! :)

*Coughcough* Sorry. Back to pineapples. Which I don't know why they have the word apple in them because they don't look or taste like apples at all. They are piney though. Just not appley. Jusssayin'!


Ingredients:

Topping-
1 Can Pineapples
3/4 Stick Butter
3/4 Cup Light Brown Sugar


Batter-
1 1/2 Cups All-Purpose Flour
2 Tsp Baking Powder
1/4 Tsp Salt
3/4 Stick of Butter, Soft
1 Cup Sugar
2 Large Eggs
1 Tsp Vanilla
1 Tbsp Dark Rum
1/2 Cup Unsweetened Pineapple Juice (I use the can juice!)
2 Tbsp Rum To Sprinkle *(Optional, I didn't)


Directions:

You can go ahead and start on the topping first, but I actually chose to start with the batter, so when I was done I could quickly make the topping and put it in the oven quickly. However, the only downfall to this is that your cake pan gets very hot, so you have to protects your hands while placing it in the oven. Also, I'm not sure if it's because of me doing this, but when I flip the cake onto a plate, some of the sugar stays stuck on the pan, because maybe I didn't let it harden and sit before I added the batter. So because of this, I will start off with the topping part of the recipe first!

Topping-
Add your butter and sugar into a medium saucepan on medium to high heat. Stir once in a while until mixture begins to boil. After it boils don't stir anymore, allow it a few seconds, and then plop it onto your cake pan. Place your pineapples on top in any pattern you would like.
(*I didn't butter or spray the pan, but you can go ahead and do so, just in case.)


(*If you have to double the recipe like I did, I did just double the batter, but I did the toppings individually.)

Batter-
Preheat your oven to 350 degrees Fahrenheit.
Begin by sifting the flour, baking powder, and salt in a medium to large bowl. Beat the butter in a separate bowl/mixer, and then add the sugar. After they mix, but they do not become creamy, add the eggs on at a time. Add the vanilla and rum. Once everything is mixed, begin adding the flour mixture in parts until everything is incorporated. When your done adding the flour, it is a tough batter, so don't worry. At this point add in the pineapple juice, beat well.
Spoon the batter.


Bake in your oven for about 45 minutes (*Mine is hotter, so about 30-35 is good for me.) at 350 degrees Fahrenheit.
Once it's done, take it out, let it stand for a couple minutes, invert onto a plate, sprinkle rum if you wish, and cool.

You should get something like this!
