Vanilla Bundt Cake

HOLY CRAP A POST? Yes sirrieee!
This has been the first cake I've baked since I've moved! Hence the total blog abandonment.


So I did originally want to do a chocolate cake, but I wanted to melt some Baker's chocolate. No matter how much I searched, every cake called for cocoa powder, and nooo! I wanted melted chocolate. I'm going to have to scrounge around in some recipe books to see if they can help. The internet is full of cocao loving lazy chocolate-melting haters! Still, I guess this was my destiny, cause I ended up totally being in the mood for a nice, simplistic bundt cake.


After waiting for it to cool, I felt the cake was a bit dry. Make sure you have your milk at hand. However, what was left for the next day, I seemed to like a lot more. Like over night it magically chugged in some moisture. Either way, it's a perfect simplistic cake that I really enjoyed, and hope to make again.

Ingredients:

I Cup Granulated Sugar
I Stick (1/2 Cup) Butter
1 Egg, room temperature
2 Egg Whites, room temperature
3/4 Cup Milk (Preferably low-fat.)
2 Tsp Vanilla Extract
2 Cups All-Purpose Flour
1 Tbsp Lemon Zest (*Optional)
2 tsp Baking Powder
1/4 tsp Salt
Powder Sugar (*Optional Garnish, I didn't use it.)

Directions:

Preheat your oven to 350°F and grease, butter, non stick your Bundt pan; set it aside.
Beat the sugar, butter, egg, and egg whites in a large bowl, mixer on low to medium speed.
Then add the vanilla and milk, mixing well.
I places the flour, lemon zest, baking powder, and salt in a separate bowl and gave them a quick mix.
Then I added it little by little into the original mixture. Beat until smooth.
Pour into Bundt pan. Bake for about 30 minutes, or untill tooth pick comes out clean. (Mine took 25 minutes.) After baking, loosen from pan and allow to completely cool on rack.
Garnish as desired.

I Moved!


Whoa! Has it been a crazy ride these past few months! I moved from the States to my home country, Costa Rica. It's been seriously insane. I have had no time for anything, and school is seriously tough here so my lifes consisted of: Waking up, School, Study, Eat, Sleep!

This can't be a long blog post because my whiny brother is next to me nagging for the only computer we have.
But I just wanted you guys to know, I haven't abandoned this blog at all, it's just my current situation makes it super hard to post as recently as I'd like. I'm also not living in my own home, so I can't use the kitchen.
Which means I can't cook my own food.
I don't know how I've done it!

The moving people who are bringing my stuff from the states should be coming tomorrow, and hopefully I can enter my own home in  a couple weeks or so!

Pleaseeee bear with me, I know this whole time lapse must be super annoying, for ya'll as well as I.

The MA Graduation

Again, sad to say, not a recipe post. However, still a very important post to my life.
For the last year and some my mom has been working hard training to become an MA (Medical Assistant) and finally yesterday night her sweat and hard work finally paid off. I'm proud and thankful, because literally because of her studying hard at this, we have been able to survive the way we have. :)

Hectic Day

Alright, so even though I have nothing worth sharing today, I still feel like chatting a little with you guys!

Yesterday at around 8 or so I swallowed down some french fries from McDonalds and headed on a two hour trip to the airport to pick up my grandma and aunt. Can I just say, it was crazy. Driving at fast speeds with no idea where the heck your headed in the dark is so not the best idea. Luckily, my mother, bro, and i arrived in one piece. After getting horribly lost in the airport parking and then the actual airport, we finally got around to picking up our family, that had just luckily finished with the traveling process.

I definitely drove the way back, but we had to ask this random police officer and gas station guy because again, we were still horribly lost haha. Anyways, we got home at around 2 a.m, but before I could head to bed, I had to finish the last half hour of my Korean drama, this one is Hero. Sadly, no romantic kiss in the end. -.-

Moving on to the present.

Today was a pretty chill day. We all woke up late, I had a grease covered Chinese Taco for breakfast, life was good. (I'm so totally on track with my diet here.)
Anyways, we all managed to shower, get ready, and swing to the mall for a while. I've never had so much fun just trying on dress after dress. I have this like, weird clothing obsession.
Then to rap things up, I got myself four pairs of new shoes, they were just so crazy dirt cheap it was crazy! I'm such an extreme happy camper.

Lastly, as if to wrap up my days, my friends came over, kidnapped me, and took me to the beach. Walking around the beach at night time was really interesting, I could totally believe that "the world is flat" things people back in the day use to ya'know, believe.



Did I mention I ate so much at the mall that I'm still stuffed and it's midnight? It's crazy, forget dinner today.

Well, I'm heading down the path of wrinkles from staying up so late, so it was nice chatting with you guys, even if I do the most talking, or.. typing.

Video&Thoughts

Once again it's been an eternity. And it's about to get worse too! My moms graduation is coming up pretty soon, I am an excited noodle for that one!
I also have this really cool idea for a video, but since I need friendly cooperation and time setting up the time and place is a little harder.
Today I have a small vlog for you guys to temporarily fill that hole is your heart you know you guys feel without me. (Hahaha) Enjoy?


On a side note. I think I'm going to start this thing, where I pick one or two recipes every week, and right then and there go out and buy everything, hopefully film it since I have a tripod now, and write up a blog post for it!
We can explore the foods of the world together!

My Favorite Color Is Purple

How come so many people like the color purple? You know, as a young'in I always felt so awesome cause my favorite color was purple and everyone else's was either blue, red, or pink.
Apparently as the years have gone by, people seem to have changed their minds! While I know everyone should love purple, I no longer feel special loving it. In fact I'm jealous. Of people loving my color. Hehe.

Of course, this is all in the spirit of fun. Cause I know someone who's just looking for trouble is going to say this is offense. *Sighhhhh* -_-

What's This!? Comic Pictures

What!? Can it be!? A post after only one day!? YES! It is! Hehe, sadly, there is no recipe this time around. Don't forget, this is my personal little blog too! Although I'll admit I kind of did what to keep this recipe related :/
But then I realized I was getting fat and needed to stop making cakes and cookies >:O

So let's talk about me now cause I'm selfish! :D
I'm planning to go to either WalMart or Best Buy on Friday so I can finally get my hands on a tripod! I'm sick and tired of piling books and boxes on top of each other to get the right height. Don't forget that I can't even adjust the angle of this thing, so I can't film recipes or not have my camera fall and topple over when I accidently ever so slightly bump it.

I've also gotten into my YouTube craze again. I'm actually enjoying editing a little now, just because after I'm done I know it'll be ready to upload. However, I don't want to upload all at once, because if I do I know I won't have any at some point and just be stuck there like.. ah... umm.. no videos...

Blah, anyways! Here's a post I've been planning to do since last year! (LOL)
When I made these I was crazing over four squared pictures. Or comic like strip type of pictures. Not like stripping like strippers, but like comic strip people.







I've mostly gotten over it, but I can't help think this style of pictures are so cute. And not just because I'm in them you know. ;D

Hehe, just kidding! But I do like to make funny faces at the camera o.0

Anyways, I hope I can get my camera a tripod soon and get some health stuff going on this blog of mine!

Hello 2012! Pineapple Upside-down Cake :)

The year is here! It's time to get your resolutions from last year that we failed in action this year! Hehe, come on, you know it happened to you too. ._.

Depression over, this is a recipe I've been planning to post for so long, but every time I sat down on my computer, I remembered something else I had to do and forgot this one... I'm sorry. :'(

If any of you watch Korean dramas and haven't seen the Secret Garden, then let me tell you that you are missing out! I TOTALLY RECOMMEND IT! It's sooooooo freakishly good it's crazy. Lie To Me, Coffee Prince, and City Hunter are really good too! :)

*Coughcough* Sorry. Back to pineapples. Which I don't know why they have the word apple in them because they don't look or taste like apples at all. They are piney though. Just not appley. Jusssayin'!


Ingredients:

Topping-
1 Can Pineapples
3/4 Stick Butter
3/4 Cup Light Brown Sugar


Batter-
1 1/2 Cups All-Purpose Flour
2 Tsp Baking Powder
1/4 Tsp Salt
3/4 Stick of Butter, Soft
1 Cup Sugar
2 Large Eggs
1 Tsp Vanilla
1 Tbsp Dark Rum
1/2 Cup Unsweetened Pineapple Juice (I use the can juice!)
2 Tbsp Rum To Sprinkle *(Optional, I didn't)


Directions:

You can go ahead and start on the topping first, but I actually chose to start with the batter, so when I was done I could quickly make the topping and put it in the oven quickly. However, the only downfall to this is that your cake pan gets very hot, so you have to protects your hands while placing it in the oven. Also, I'm not sure if it's because of me doing this, but when I flip the cake onto a plate, some of the sugar stays stuck on the pan, because maybe I didn't let it harden and sit before I added the batter. So because of this, I will start off with the topping part of the recipe first!

Topping-
Add your butter and sugar into a medium saucepan on medium to high heat. Stir once in a while until mixture begins to boil. After it boils don't stir anymore, allow it a few seconds, and then plop it onto your cake pan. Place your pineapples on top in any pattern you would like.
(*I didn't butter or spray the pan, but you can go ahead and do so, just in case.)


(*If you have to double the recipe like I did, I did just double the batter, but I did the toppings individually.)

Batter-
Preheat your oven to 350 degrees Fahrenheit.
Begin by sifting the flour, baking powder, and salt in a medium to large bowl. Beat the butter in a separate bowl/mixer, and then add the sugar. After they mix, but they do not become creamy, add the eggs on at a time. Add the vanilla and rum. Once everything is mixed, begin adding the flour mixture in parts until everything is incorporated. When your done adding the flour, it is a tough batter, so don't worry. At this point add in the pineapple juice, beat well.
Spoon the batter.


Bake in your oven for about 45 minutes (*Mine is hotter, so about 30-35 is good for me.) at 350 degrees Fahrenheit.
Once it's done, take it out, let it stand for a couple minutes, invert onto a plate, sprinkle rum if you wish, and cool.

You should get something like this!
