Sugar Donut Muffins

Let's hurry before my internet goes psycho again! O___o
So really quickly, there have been so many birthdays this month, it's crazy. So instead of typing recipes I have stored, I want to just pile up with sweet babies for now! I mean, we are in October, the month of sweetness, so let us be sweet!

I made these Sugar Donut Muffins for my friend, who said it didn't matter what I make, because she's a pig. A skinny as a toothpick pig!
I didn't love these to be completely honest, but one of her friends who ate one loved them and asked me for the recipe, so I'm guessing it's one of those recipes that just has to suit your type of taste buds!


Ingredients:

3/4 Cup Sugar
1 Large Egg
1 1/2 Cups All Purpose Flour
2 tsp Baking Powder
1/4 tsp Salt
1/4 tsp Ground Nutmeg (*I used Cinnamon!)
1/4 Cup Vegetable Oil
3/4 Cup Milk (any kind)
1 tsp Vanilla Extract
2 Tbsp Butter, Melted
1/2 Cup Sugar, for rolling

Directions:

Preheat oven to 350 F. Lightly grease a muffin tine with cooking spray, vegetable oil, or muffin cups.
In a large bowl, beat together sugar and egg until light in color.
In a small bowl, whisk together flour, baking powder, salt and nutmeg (or cinnamon). Pour into egg mixture and stir to combine. Pour in vegetable oil, milk and vanilla extract.
Divide batter evenly into 10 muffin cups (I did 12), filling them about 3/4 full.
Bake for 15-18 minutes, until a tester comes out clean.
While muffins are baking, melt butter and pour rolling sugar into a bowl.
When muffins are done, (I preferred to let them cool completely first), lightly brush the top of each with some melted butter, remove from the pan and roll in sugar. Cool on a wire rack.
